The Bikini Cocktail
Makes enough for 10 guests
For the Clementine Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
Ingredients for the Premix (produces 850ml, enough for 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Method
For the Citrus Syrup: Combine all the ingredients into a saucepan, bring to a light boil, stirring so the sugar melts. Then, remove from the heat and leave to cool down entirely. Transfer into a sealable bottle, cap it and store in the refrigerator, it can be stored for around four weeks.
For the Cocktail Base: Combine every spirits and syrup in a big jug, leave to sit for one hour, then strain preferably using muslin, making it completely strained.
To serve: Pour 85ml of your cocktail base into a stirring glass containing ice, gently stirring gently for about 60 seconds until cold. Strain into a chilled martini glass or similar, top with the cranberries and complete it by giving it a brief mist of mandarin oil over the top.
